Morning

It is most definitely September; there is a slight chill in the air that reminds us of this. Fortunately, I could not begin to fathom a better place to be right now than on vacation. Whether at home or here with my parents, mornings are always the same beautiful sliver of perfection.



Chocolate Peanut Butter Oatmeal
This bowl has been a morning staple lately, sweet, salty, oaty perfection. Without the chocolate chips it is my oatmeal base as I like to call it - the oatmeal I eat daily, prior to mixing in and topping it with the current flavor(s) of the week.

  • 1/2C oats, uncooked (I use steel cut, although old fashioned or large flaked works as well - do not use instant or quick oats)
  • 1 1/2C water
  • 1 banana, sliced thinly
  • 1T chia seeds
  • 1t cinnamon
  • 1t vanilla extract
  • 1t sea salt
  • 1T natural peanut butter
  • 1T chocolate chips

    1. In a small sauce pan over medium heat (I use #4 on my stove top), bring oats, water and banana to a bubbling-boil.
    2. Reduce heat to low (I use #2 on my stove top) and stir in chia seeds, cinnamon, vanilla, extract and sea salt.
    3. Allow oats to reach desired consistency before removing from heat, pouring into a bowl and topping with peanut butter and chocolate chips!
    4. MMMMMMMMMmmmmmmmmmmmmmmmmmmmm!

    Special note: If you do not have chia seeds, consider subbing in flax meal - although this will affect the flavor. If you do not use either chia or flax, reduce water to 1C as the chia or flax act as a "glue" that sucks up a lot of water when used alongside the oats! Otherwise, you'll have some very runny oats or a very long cook time!
