I told you I was going to share some food with you, and so I shall.

And a recipe of my own, Vanilla Cake Batter Oatmeal... om nom nom!



Vanilla Cake Batter Oatmeal
  • 1/2C Old fashioned oats
  • 1 Banana
  • 1 1/2C Water
  • 1/4t sea salt
  • 1t Ground cinnamon
  • 1t Pure vanilla extract
  • 1T Chia seeds
  • 1T Vanilla flavored protein powder (I used Jillian Michaels Whey Protein ‘Vanilla Cream’ Powder)
  • Unsweetened shredded coconut, to garnish
  • Rainbow sprinkles, to garnish

    1. Using a small heavy bottom sauce pan bring oats, banana, water and sea salt to a "bubble" over medium heat (I can hear my oatmeal "phlouf" and gurgle from the next room), most of the liquid will be soaked in by this point.
    2. Add an additional 1/2C water, along with cinnamon, vanilla extract, chia seeds, and protein powder, stirring to combine.
    3. Allow oats to simmer on a medium-low setting until oats reach a consistency you enjoy - I like mine THICK!

    That looks delish! I might try that oatmeal! Thx for the recipe for the ginger cookies - I was looking for one with whole wheat flour :)
